Gluten-Free Blueberry Pancakes

Welcome to Healthy and Fabulous in less than 20! For years I gave up pancakes because of the way they made me feel. Despite being delicious, they would sit in my stomach like a rock and drain all my energy. I have been trying all sorts of pancake recipes posted by people who apparently have that same feeling. In my trials I have developed my own recipe that is simply fabulous. Whether you eat gluten or not, you will LOVE these!

Preparation Time: 10-15 minutesPancakes 2

Ingredients: 1 banana, 1 egg, 2 tbsp. oat flour, 1 tbsp. flax seed, fresh blueberries, cinnamon,  coconut oil, 100% pure Grade B Maple Syrup *All ingredients are organic

Serving size: 3 pancakes

  1. Coat a frying pan with coconut oil and let it get hot
  2. Mash 1 large very ripe banana in a bowl
  3. Add 1 egg, 2 tbsp. oat flour and mix with banana until consistency is relatively smooth (a few lumps are fine)
  4. Add 1 tbsp. ground flax seed
  5. Add a few shakes of cinnamon. Combine the cinnamon and ground flax into batter
  6. Add a small handful of blueberries. Lightly stir
  7. Once the pan is hot enough so that the pancake mixture wont run, pour it into the pan (each one slightly larger than the palm of your hand)
  8. Flip pancakes as necessary. When both sides have a slight golden brown appearance you are ready to serve
  9. Add 100% maple syrup or just fresh berries
  10. Enjoy! These are amazing and you’ll feel great too
